Grain-Free Fudgy Chocolate Cookies



Enjoy these rich, fudgy chocolate cookies that don't have any grains in them. Coconut sugar and maple syrup are used to make them sweet. They are made with almond flour and cocoa powder. Almond butter is the secret ingredient. It gives the cookies more flavor and keeps them moist and chewy. Great for people who want to eat something without gluten!

Ingredients:

  • 2 cups almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil, melted
  • 1/4 cup pure maple syrup
  • 1/4 cup creamy almond butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips
  • 1/4 cup chopped walnuts optional

Instructions:

Preheat oven to 350F 175C

Line a baking sheet with parchment paper

In a large mixing bowl, combine almond flour, cocoa powder, coconut sugar, baking soda, and salt

Add melted coconut oil, maple syrup, almond butter, and vanilla extract to the dry ingredients

Mix until well combined

Fold in dark chocolate chips and chopped walnuts, if using

Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, leaving space between each cookie

Flatten each cookie slightly with the back of a spoon or your fingers

Bake in the preheated oven for 10-12 minutes, or until edges are set

Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely
