Ingredients:
- 2 cups of quinoa
- 4 medium-sized turnips, peeled and diced
- 2 tablespoons of sesame oil
- 1 tablespoon of soy sauce
- 1 tablespoon of honey
- 1 teaspoon of sesame seeds
- 4 cups of mixed greens e

- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of crumbled feta cheese
- Salt and pepper to taste
Instructions:
Preheat the oven to 400F 200C
In a bowl, mix the diced turnips with sesame oil, soy sauce, honey, and sesame seeds
Toss to coat evenly
Spread the turnip mixture on a baking sheet and roast in the preheated oven for 20-25 minutes or until turnips are tender and golden brown
Stir occasionally
While the turnips are roasting, rinse the quinoa thoroughly in cold water
In a saucepan, bring 4 cups of water to a boil, add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed
Remove from heat and let it cool
In a large salad bowl, combine the cooked quinoa, roasted turnips, mixed greens, cherry tomatoes, red onion, and crumbled feta cheese
Toss gently to mix all the ingredients
Season the salad with salt and pepper to taste
