Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1/4 cup vodka
- 1/4 cup Kahla coffee liqueur
- 1 tsp vanilla extract
- For the Vodka-Buttercream Icing:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tbsp vodka
- 1 tbsp Kahla
- 1 tsp vanilla extract
- Pinch of salt
- Optional: chocolate shavings or coffee beans for decoration
Instructions:
Warm up the oven to 350F 175C and put paper liners in a cupcake pan
Mix the flour, baking powder, and salt together in a bowl with a whisk
When the butter is soft, put it in a different bowl and mix it with the sugar until it is light and fluffy
Add the eggs one at a time and make sure they are well mixed in
Mix the milk, vodka, Kahla, and vanilla extract into the batter until it is smooth
Slowly add the dry ingredients to the wet ones and mix them together until they are just combined
Fill each cupcake liner about two thirds of the way to the top with batter
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
After putting the cupcakes in the pan to cool for a while, move them to a wire rack to cool completely
For the buttercream frosting with vodka: Put the softened butter in a bowl and beat it until it's smooth
Add the powdered sugar, vodka, Kahla, vanilla extract, and a pinch of salt one at a time
Mix the frosting well until it's fluffy and smooth
Use a piping bag or a knife to frost the cupcakes with the vodka-buttercream icing after they are completely cool
If you want, you can decorate with chocolate shavings or coffee beans
