Vegan Sticky Toffee Scones



These vegan sticky toffee scones are a delightful twist on a classic treat. They are tender, moist, and filled with sweet date flavor, making them perfect for breakfast or a cozy afternoon snack.

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup vegan butter, cold and cubed
  • 1/2 cup chopped dates
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup

Instructions:

Warm the oven up to 400F 200C and put parchment paper on a baking sheet

Mix the flour, brown sugar, baking powder, and salt in a large bowl with a whisk

To make the dough, add the cold vegan butter and cut it in with your fingers or a pastry cutter until the dough looks like big crumbs

Add the chopped dates and mix well

In a different bowl, mix the vanilla extract, maple syrup, and almond milk with a whisk

Add the wet ingredients to the dry ones and mix them together until they are just mixed

Be careful not to mix too much

Place the dough on a lightly floured surface and shape it into a circle that is about an inch thick

Get an empty baking sheet and cut the dough into eight wedges

The scones are done when they are golden brown and cooked all the way through after 15 to 18 minutes in the oven

Take it out of the oven and let it cool down a bit before you serve it
