Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/2 cup diced red bell pepper
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup roasted cashews
- 1/4 cup raisins
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon curry powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon turmeric
- Salt and pepper to taste
Instructions:
Rinse the quinoa thoroughly in a fine-mesh strainer
In a medium saucepan, bring 2 cups of water to a boil, add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed
Remove the cooked quinoa from heat, fluff it with a fork, and let it cool to room temperature
In a large mixing bowl, combine the cooled quinoa, diced red bell pepper, diced cucumber, diced red onion, chopped fresh cilantro, roasted cashews, and raisins
In a small bowl, whisk together the olive oil, lemon juice, curry powder, ground cumin, turmeric, salt, and pepper to create the dressing
Pour the dressing over the salad ingredients in the large mixing bowl and toss everything together until well coated
Refrigerate the salad for at least 30 minutes to allow the flavors to meld
Serve the Curried Quinoa Salad chilled, garnished with additional cilantro if desired
